These chewy chocolate chunk cookies with pools of melted dark chocolate, flaked sea salt, and a coating of semi-sweet chocolate coating the entire bottom of the cookie, are what cookie dreams are made of. Inspired by the famous Jacques Torres Cookies, I used my go-to chocolate chip cookie recipe and added a thick coating of chocolate to the bottom of each cookie. These are NOT copycats. But boy are they good. With all that chocolate, there needs to be a tiny bit of salt to cut the richness. Enter flakey sea salt, sprinkled atop the cookies right after they come out of the oven. Perfect balance.
I shared a sampling of different types of cookies with some extended family last week, and while they loved all of them, they raved about these ones. My nephew even called them "the best chocolate chip cookies he has ever tasted". Technically they're chocolate "chunk" but hey, chocolate is chocolate.
The thick layer of melted chocolate is simply spooned and spread onto the bottom of each cooled cookie. After a few minutes in the fridge to chill, the chocolate is solid and creamy and adds a layer of flavor and texture that you didn't think you needed in a chocolate chunk cookie. You might end up wanting to use that trick every single time.
